Turkey and Sweet Potato Chili

Ingredients

800 g ground turkey
4 tsp canola oil 20 mL
4 cloves garlicminced
1 onions, finely chopped 200 g
1 1/4 tsp ground cumin 3 g
1 tbsp chili powder 7 g
1/2 tbsp dried oregano 1 g
10 sweet potatoes, peeled and chopped into 1-inch cubes 1.8 kg
1 2/3 cup red beans (canned) 420 mL
2/3 cup strained tomatoes 150 g
1/3 cup fresh cilantro, chopped [optional] 12 g
3/4 tsp salt to taste 3 g
1/4 cup pine nuts, coarsley chopped 35 g

Method

Finely chop the onion and mince the garlic. Peel the sweet potatoes and chop them into 1-inch cubes. Drain and rinse the canned beans. Measure and weigh all remaining ingredients. Combine oil, turkey, onions, garlic and spices in a slow-cooker. Break up the turkey and mix all ingredients well. Place sweet potatoes and beans in a layer over the turkey mixture. Pour tomato sauce over the sweet potatoes. Cover the slow cooker with the lid and cook 3-4 h at low temperature until the potatoes are tender. Sprinkle with freshly chopped cilantro leaves (optional) and coarsley chopped pine nuts, then serve.
