How many of us have made the excuse that it’s just too difficult to cook every day? With work, kids, school, friends, family, and everything else pulling us in different directions, it’s easy to see why. But, eating better always involves a bit more cooking, since we can control the quality and quantity of our ingredients. So, to help you find a little time to treat yourself or your family to a good meal, we’ve put together our favourite easy weeknight meals. They’re quick, they’re easy, and they’re delicious!
This Japanese soup is hearty, delicious, and packed full of healthy ingredients. Not only that, it all comes together quickly, and the more you make it, the faster you’ll get. To give yourself even more leeway during the week, you can make a bigger batch and either bring some for lunch or serve it again later in the week. Leftover soup is always more flavourful!
Blue cheese comes in many varieties and a little bit will add a ton of flavour. It’s what gives these burgers a little extra something. You can try different varieties of blue cheese to change this recipe up a little bit.
Legumes have a ton of fibre, which helps you digest better but also fills you up and leaves you feeling satisfied. Beans can make some people a little bit wary (we all know what can happen) but beans are an excellent food to incorporate into your diet. As long as you’re eating a balanced and healthy meal, you can easily avoid some of the discomfort that can be caused by legumes.
