Apple Graham Muffins

Ingredients

5 Graham crackers 35 g
1/2 cup brown sugar 100 g
1 tsp baking powder 3 g
1 eggs size large, beaten
65 g fruit applesauce 1/4 cup
1 tsp vanilla extract 5 mL
1 apples, green, Granny Smith type, diced 180 g
1 cup white flour (all purpose) 120 g
1 tsp ground cinnamon 3 g
1/2 tsp baking soda 2 g
1/4 cup canola oil 65 mL
2 Graham crackers 14 g
1/4 tsp ground cinnamon 1 g
2 tsp margarine non-hydrogenated , melted 9 g

Method

  1. Preheat oven to 375°F.
  2. Spray a 12 cup muffin tin with non-stick spray or line with paper baking cups.
  3. In a large bowl combine graham wafer crumbs, flour, brown sugar, cinnamon, baking powder and baking soda, mix in diced apples.
  4. In a small bowl combine beaten egg, oil, applesauce, and vanilla then add to dry ingredients and mix until just combined.
  5. Divide batter evenly between muffin cups.
  6. In a small bowl, mix together graham wafer crumbs, cinnamon and margarine and sprinkle over the tops of the muffins.
  7. Bake for 15 minutes.
