Ingredients

1 cup water, warm 250 mL
2 1/2 tsp quick-rise yeast 12 g
1 tsp maple syrup 5 mL
2 eggs size large
1/2 cup flax seeds, ground 90 g
1 1/4 cup gluten flour 140 g
1/2 tsp xanthan gum 2 g
1 tsp salt 5 g
2 tbsp butter, unsalted, softened 28 g

Method

  1. In a large bowl, mix the warm water, maple syrup, and yeast. Add the other ingredients, one at a time, in the order listed. Mix well between each addition.
  2. Knead the bread in the bowl for 10-15 min, until the dough bounces back after a gentle pressure with a finger. The dough will be quite sticky.
  3. Transfer the dough to a loaf pan. Put inside the oven, close it and let the dough rise for 45 min.
  4. Remove the pan from the oven and preheat the oven to 190°C/375°F. When the oven is hot, put the pan in the middle of the oven then bake for 25-30 min.
  5. Let cool for at least 15 min, then remove the bread from the pan. Let cool completely before slicing.
