Ingredients

30 g dark chocolate (90% cacao, cut into pieces
2 tbsp butter, unsalted 26 g
2 eggs size large
1 pinch salt 0.1 g
1/8 tsp ground cinnamon 0.4 g
1 pinch cayenne pepper 0.1 g
1/4 tsp monkfruit sugar substitute [optional] 1 g

Before you start

A mixer will be very useful to beat the egg whites.

Method

  1. Melt the butter and chocolate in a large bowl, using a microwave oven.
  2. Separate the egg whites from the egg yolks. Add the yolks to the chocolate mixture with the spices and sweetener. Incorporate using a whisk. In another bowl, beat the egg whites with salt into stiff peaks, using a mixer.
  3. Slowly add the whites to the preparation, using a spatula to incorporate well.
  4. Portion out to cups, then chill in the refrigerator for at least 3 hours before serving.
