Ingredients

1 clove garlic, pressed
2 tbsp fresh dill, finely chopped 4 g
4 tsp Dijon mustard 20 g
1/4 cup olive oil 65 mL
3 tbsp lemon juice, freshly squeezed 1 lemon
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
1 kohlrabi 400 g
1 cucumbers, medium size 260 g

Before you start

Choose small bulbs, between 5 and 7 cm in diameter, since larger kohlrabies tend to be woody.

Method

  1. Prepare the dressing directly in the serving bowl: add the pressed garlic, chopped dill, mustard, oil, and lemon juice, along with salt and pepper to taste. Mix well.
  2. Peel the kohlrabi, shred it using a large-holed grater, then add it to the bowl. Wash the cucumbers, slice them thinly, using a mandolin, then add them the bowl. Toss well.
  3. Adjust the seasoning then serve.
