Spinach Salad with Apricots

Baby spinach, dried apricots and walnuts dressed with a white wine vinaigrette.

Ingredients

12 dried apricots 1/2 cup
1/4 cup white wine 65 mL
10 cups baby spinach 160 g
1/4 cup canola oil 65 mL
1 tbsp apple cider vinegar 15 mL
1 tsp honey 7 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
1/2 cup walnuts [optional] 50 g

Method

  1. In a small bowl, macerate the apricots in the white wine for at least 20 min. Drain the apricots, resrving the liquid, slice them into bite size pieces and put them in a salad bowl.
  2. Wash the baby spinach and spin dry, then add it to the salad bowl. Set aside.
  3. Mix the reserved wine, oil, vinegar, honey, salt and pepper. Beat the mixture using a fork until well emulsified. Pour the vinaigrette over the spinach and apricots then toss gently. Add the walnuts (optional) and serve.

I like the idea of macerating the apricots, usually I just toss dried fruit right into my salad. The dressing had a nice light flavour.

This is another recipe where I was trying something new and I'm glad I did. Super easy to make and nice and sweet and full of flavor even though there are not many ingredients. I forgot my walnuts at work and so I used slivered almonds instead and I'm sure it was just as good. It gave it a nice crunch!
